Healthy (kinda) Gluten-free Apple Pie Squares

Crust:
1.25 cups almond meal
.25 cup ground pumpkin seeds
2 Tbls MCT Oil
2 Eggs
.25 Cup Stevia
.5 Apple, mushed

Blend together everything and pour in 8×8 pan. Put in preheated 350F oven until sides start to lightly brown

Caramel Center:

1 stick butter
.5 cup stevia
1 tbls honey
1 tsp vanilla extract
.25 cup heavy cream or half and half

Heat butter on low to melt. Add stevia and honey. Increase heat to medium, stirring frequently to prevent burning. When amber color, remove from heat. Quickly wisk in cream and vanilla until uniform. Let sit to cool while preparing apple pie topping

Apple Pie Topping:

1 apple – pealed, cored and sliced
.25 stick of butter
1 tsp cinnamon
.25 cup stevia
4 tbls water
.5 tsp xantham gum

Melt butter on med-low heat in sauce pan. Add stevia, cinnamon, 2 tbls water and apple. Cover and cook for 4-6 minutes until apples start to soften. Add remaining water and xantham gum. Stir well, continue to heat uncovered until apples soft but not mushy.

Pour cooled caramel over crust, then spread apple mixture over caramel. Return to oven for 20 minutes. Let cool until warm and serve.
