Ingredients
5 Large Duck Eggs
2 tbsp Dessicated Coconut
1 Tbsp Inulin Powder
1 Tbsp Whey Protein Isolate
2 stalk Spring Onion

* For Spice Paste
6 pcs Shallots
2 cloves Garlic
4 pcs Red Chillies
1/2 tsp Salt
1/4 tsp White Pepper

Direction
Whisk the eggs slowly with a fork (don’t over do it and make the mixture foamy) on a medium bowl, set aside

Grind the spice paste ingredients on a food processor, then put the paste in a large mixing bowl.

Mix inulin powder, whey protein isolate and dessicated coconut with the spice paste, until well combined

Add the egg and spring onion into the mixture, whisk to combine

Heat the coconut oil on a frying pain on low heat, then pour the egg mixture

Cover the frying pan with a lid for 30 second, so the steam will make the egg puffs

When the edge has starting to brown, flip the egg to the other side and cook until done

Cut into 6 – 8 pieces when served
