AN NEW ENGLAND TRADITION – STEAMED BROWN BREAD. KETOFIED

Hobbit’s Steamed Brown Bread – Ketofied
Servings=8
Time=90 min
Ingredients:
1/3 cup almond flour
2 tbsp Pea Protein Isolate
2 tbsp whey isolate
3 tbsp butter, melted
2 eggs
1/2 tsp xanthan gum
1/2 tsp maple extract
1 tbsp cocoa powder
(unsweetened)
3 tsp sweetener
1/4 cup pureed kabocha (or
pumpkin)
1 tbsp cottage cheese
1/4 tsp allspice
2 tbsp flax meal
This takes a little planning but it’s not too bad. You will need a 15oz (or larger, just double recipe) metal can, cleaned
well with top removed. Preheat oven to 300F. Take can, place something underneath it in a pot that is oven-safe, like
a mason jar rim or upside down tuna can (empty). Pour enough water in the pot to come half-way up the can.
Remove the can, spray with oil, set aside. Bring water to a boil. While waiting for the water to boil, dump all the
ingredients in your blender and blend until smooth. Should be a thick batter. Pour\scrape into the can, smoothing
out the top. Should be about 2/3rds full. Cover the top of the can with aluminum foil and secure with cooking twine.

Once the water is boiling remove from heat, put the can in on the ‘base’, place in oven. Bake for 1 hour. Remove
from oven and remove foil. Let cool for 10 minutes before removing bread from can. Slice into 8 slices, butter, EAT!
